Comfort food is a must, even for us health nuts in the plant-based world. But here’s the thing… it’s a total myth that all comfort food has to be uber processed and unhealthy. In fact, with the right ingredients you can create rich, decadent, and HEALTHY comfort foods that will feed your body and soul in tandem.
Currently, I am convinced that the ultimate comfort food is this “cheese” sauce that I recently developed on a night of desperate cravings. There are so many ways to eat it! I love it over Trader Joe’s cauliflower gnocchi, as a dip for chips or veggies, over grain bowls, or honestly by the spoon. There is a secret ingredient (ok, it’s truffle salt) that makes it straight up addictive. AND it is oil free! You’re welcome.
Here is what you need:
1 cup raw, unsalted cashews
8 tbsp water
2 Tbsp nutritional yeast
1 tbsp lemon juice
2 cloves garlic
1 tsp rosemary
1/4 tsp black pepper
1/2 tsp Truffle salt
Just blend together all of the ingredients in a high powered blender or food processer, until creamy and smooth. Voila!
Want to take this to the next level and make cheesy cauliflower gnocchi? Here are some tips for cooking gnocchi, as it can be super tricky to master.
-Heat a pan on medium
-For each bag of cauliflower gnocchi, add 1-2 tbsp water
-Cover and cook… do NOT stir! It will be tempting to flip the gnocchi and stir around, but leave them alone so they can crisp up and not get nasty and mushy. This step will likely take about 10 minutes, but it varies based on the type of pan.
-Once the gnocchi is browned to perfection, then you can carefully (without stirring) flip them over and continue to cook for a couple minutes.
Top with cheesy sauce, more black pepper, and a sprinkle of Daiya shreds (if you’re a cheese fanatic like myself).
